Tomato, Basil and Mayonnaise on Olive Oil Grilled Whole Wheat!

I remember growing up in my European immigrant family with great food.

Some from Italy and some from Eastern Europe but all of it driven by the freshest ingredients and much of it, meatless.

My grandmas and aunts always had their own gardens and were “putting up” or canning something at any given time.

For me summertime always means tomato and mayonnaise sandwiches.

These were not gourmet growing up.

They were just any bread with mayo, fresh tomato and “crunchy” salt on top.

I spruced these up a little by grilling artisan whole grain bread with olive oil to give crunch and texture to the bread and I’ve also added big fleshy leaves of basil for that peppery edge that basil can give.

Hellmann’s Real Mayonnaise is my favorite with this sandwich.

Even a few slices of avocado would be delish!

Get creative and keep it meatless. The possibilities are endless for a tasty, light and nutritious meal that says, “Summertime” in every bight!

  

Taco Roll-Ups! Summertime Snack for Kids to Make and Enjoy!

This is an “easy-peasy” recipe which kids can easily make.

Not only will you be able to ply them with vegetables but you will also be able to keep them busy for a while!

All you will need is:

8-10 flour Tortillas

2 8 oz. pkgs of cream cheese, softened

2 pkgs of taco seasoning mix or make your own as we did with chili powder, garlic salt, cummin, and a little cayenne and paprika

1 red bell pepper

1 yellow bell pepper

1 green bell pepper

1 8 0z. can black olives chopped

1/4 cup chopped cilantro

You may have to chop for the younger kids but mixing can be done by even the youngest of children.

Spread evenly; roll and slice.

These can even be done “cigar style”; roll and slice just 2-3 times for easy holding for little hands.

Crispy Red Skin Potatoes with Tahini Sauce

Having a recipe that you can make quickly and get right everytime is a great skill to master.

Red skin potatoes are a great side dish for so many dishes and these are great alone; as a treat.

I have made these for appetizers and as a snack to go with cocktails.

These are like a dressed-up version of potato skins minus the huge calorie count!

They take about 30 minutes from washing the potatoes to serving them. So you can whip them up in a jiff if need be.

Tahini Sauce

Tahini sauce is made from tahini – a sesame seed paste. Tahini sauce is thinner and used in pita sandwiches, marinades, and dips. Tahini sauce is very easy to make. Store it in an airtight container in the refrigerator and it will keep for about two weeks.

Ingredients:
1/2 cup tahini (sesame seed paste)
3 gloves garlic, crushed
1/2 teaspoon kosher salt
2 tablespoons olive oil
1/4 cup lemon juice
1 teaspoon parsley, finely chopped (optional)
Preparation:
In a food processor or mortar and pestle, combine garlic and tahini. Add kosher salt.

Remove from food processor and add olive oil and lemon juice. If too thick, add a teaspoon of warm water until desired consistency.

I washed and quatered about 12 medium sized organic red skin potatoes

Saute in about 1/4 cup of olive oil

I added about 10 shakes of red pepper flakes and 4-5 pinches of dried rosemary

I let this cook until the potatoes became browned

I then removed them from the frying pan and wrapped them in aluminum foil and placed them on a cookie sheet in a 450 degree oven for about 15 minutes.

Salt to taste

Top them off with the tahini sauce and serve.
