Sunday Brunch at Carpaccio in Bal Harbour! Wine, Women and Linguine with Clams!

Lunch at Carpaccio in Bal Harbour was the ultimate “Miami” brunch experience.
Let’s forget about the food for a moment. Carpaccio is the place to see and be seen.
Sunday afternoon brunch, after a long night of clubbing in South Beach, is the only remedy for what long nights have to offer!

The patio offers the best people watching opportunities.
This fresh mozzarella and vegetable platter was the perfect morning after meal.

Linguine with clams…

Margherita pizza….

Angel hair pasta with basil and fresh tomatoes….

The food was going fast!
Dancing until 4:30 in the morning can make a girl pretty hungry!

Fried calamari and zucchini was the fried food fix we all needed!

These were crispy, hot, salty and delicious!
A long leisurely meal, great friends, and the post-mortem of the night’s shenanagins with a cold bottle of Sauvignon Blanc is the best way to say “Good-bye” to Miami!

Grilled Ciabatta with Veggies, Avocado and Fresh Mozzarella Quite Possibly the Best Sandwich Ever!

It all starts with the bread.
With bread this amazing you really can’t make a bad sandwich.

Ciabatta sliced in half and drizzeled with olive oil is placed under the broiler until golden.

I opened up a bag of frozen veggies and sauteed until soft.

The secret sauce makes this fantastic!

We discovered this at our favorite restaurant in town and the waitress was gracious enough to share the recipe with us!

And now we eat it on everything!

Avocado makes this creamy and delicious

The ciabatta bread is mana from heaven!

Toast it just right with lots of good olive oil.
Add some balsamic vinegar.

I loaded this sandwich with fresh mozzarella….

Lots of veggies…..

The secret sauce…..

And lots of love!

Spacca Napoli in Chicago for Authentic Neapolitan Pizza and Beautiful Cheeses!

Spacca Napoli on West Sunnyside in Chicago is the home of beautiful fresh ingredients, bufala mozzarella and huge wood burning pizza ovens.

“Spaccanapoli” is the old quarter and heart of Naples, Italy.
Naples is famed as the birthplace of pizza.

Mesculin greens with a light balsamic dressing.

The special today; mozzarella bufala with olive oil and sea salt.

This didn’t last very long and it worth the trip for the cheese alone!

Pizza is wood fired and thin crust.

Fresh ingrediants and light sauce create a heavenly balance of flavors.

Meatless Monday! Spinach Fettuccine with Roasted Tomatoes and Garlic with Eggplant and Fresh Mozzarella

Meatless Monday! Fried Eggplant and spinach fettuccine is easy and fresh!
Fresh mozzarella puts the finishing touch on thinly sliced eggplant lightly coated in Italian breadcrumbs.
Roasted garlic and roasted cherry tomatoes add rich flavor to spinach fettuccine.
With all this flavor, who misses the meat?
Top with shredded parmesan and enjoy!

Toss tomatoes in olive oil and roast on 400 degrees until they pop open! and smell delicious!


Beautiful beaujolais makes dinner…beautiful!

Egg and water then bread crumbs go into frying pan with hot oil for a quick, light frying.
Mash up roasted garlic with a fork and mix in about 1/4 cup olive oil to create a “sauce”.
Add salt to taste.

Just throw in fresh baby spinach to the last few minutes to boiling pasta to add flavor and nutrition.
