<p>I am a Clevelander and <a href="http://www.foodnetwork.com/michael-symon/index.html" target="_blank">Michael Symon</a> the famed Iron Chef and celebrity <em>du jour</em> also, hails from this mid-west town.</p>
<p>Along with his acolyte,<a href="http://chefsawyer.blogspot.com/"> Johathon Sawyer</a>, cuisine in Cleveland continues to function as a pork delivery system, along side of french fries in duck fat and fois gras as garnish.</p>
<p>Food trends happen for many reasons and conspicuous consumption factors in, I&#8217;m sure.</p>
<p>But at what point do we question celebrating gratuitous overindulgence as a substitute for culinary genius?</p>
<p>I get it. If you like bacon then food cooked with or otherwise augmented with bacon is delicious.</p>
<p>Like ice cream? Like Bacon? Mix the two and, voila! Genius!</p>
<p>I think not.</p>
<p>It&#8217;s like putting a girl in a bikini on a car.</p>
<p>Is it a better car? Is the design imaginative or ground breaking?</p>
<p>Or is it just a car with a scantily clad girl astride?</p>
<p>A dish which is flavorful and healthy, appealing to the eye and created without death and suffering; now that takes some talent!</p>
<p>Make cauliflower sexy; without bacon! and make me lust for a fruit dessert over the chocolate molten, whatever and I&#8217;m impressed. </p>
<p>There is a place for everything, I will concede. However, the Malthusian mathematics will come back to haunt is all.</p>
<p>Technology aside, there is only so much land to fill the appetites of food porn addicts and the lowest common denominator of palates!</p>
<p>And while some of my favorites may be no more or less creative and unique, I would like to think that they are environmentally friendly and healthy.</p>
<p>Coconut milk soups, fruit purees, fried broccoli rabe with Marcona almonds, nut creams both sweet and savory and an endless array of spices and greens presented in inventive and unexpected ways will satisfy and delight time after time.</p>
<p>Check out the article below for a short list of tired favorites.</p>
<p>Read the whole article<a href="http://www.huffingtonpost.com/2011/11/01/ubiquitous-menu-items_n_1067397.html#s443444&#038;title=Beet__Goat"> here</a>.</p>

<p>Summertime around here has meant a huge flurry of activity.</p>
<p>The hot and steamy weather hasn&#8217;t slowed us down much but appetites tend more toward light and flavorful rather than rich and filling.</p>
<p>And the schedules are all over the place! From sport activities to musical gigs, weekend getaways and family gatherings I find that preparing and serving nutritious meals is more challanging than ever.</p>
<p>Especially when I am not there to supervise everything!</p>
<p>Well, I&#8217;ve learned to &#8220;let go&#8221; and create easy, ready to prepare and assemble food for my family; even the picky ones. </p>
<p><a href="http://www.pantrydiaries.com/wp-content/uploads/2011/08/021beans-corn-spices-cilantro-onion.jpg" rel="lightbox[3670]"><img src="http://www.pantrydiaries.com/wp-content/uploads/2011/08/021beans-corn-spices-cilantro-onion.jpg" alt="" title="021beans corn spices cilantro onion" width="477" height="358" class="aligncenter size-full wp-image-3679" /></a></p>
<p>I have been in the habit of keeping a big container of cooked brown rice in the fridge.</p>
<p>I also will sautee corn with cilantro and onions and keep that around.</p>
<p>In addition, I&#8217;ll chop green onion and fresh cilantro and keep that in the fridge, also.</p>
<p><a href="http://www.pantrydiaries.com/wp-content/uploads/2011/08/023spicy-beans.jpg" rel="lightbox[3670]"><img src="http://www.pantrydiaries.com/wp-content/uploads/2011/08/023spicy-beans.jpg" alt="" title="023spicy beans" width="477" height="358" class="aligncenter size-full wp-image-3678" /></a></p>
<p>There are always cans of organic vegetarian beans or refried beans in the panty.</p>
<p>I also make sure to keep stocked up on ripe avocados and limes.</p>
<p><a href="http://www.pantrydiaries.com/wp-content/uploads/2011/08/034cilantro-green-onion-and-lime.jpg" rel="lightbox[3670]"><img src="http://www.pantrydiaries.com/wp-content/uploads/2011/08/034cilantro-green-onion-and-lime.jpg" alt="" title="034cilantro green onion and lime" width="477" height="358" class="aligncenter size-full wp-image-3674" /></a></p>
<p>By having these ingredients handy eating on the fly is healthy and quick.</p>
<p>Even the little ones can do it; even the chronically lazy! </p>
<p><a href="http://www.pantrydiaries.com/wp-content/uploads/2011/08/027spicy-beans-and-corn.jpg" rel="lightbox[3670]"><img src="http://www.pantrydiaries.com/wp-content/uploads/2011/08/027spicy-beans-and-corn.jpg" alt="" title="027spicy beans and corn" width="477" height="358" class="aligncenter size-full wp-image-3676" /></a></p>
<p>We also like to garnish with fresh salsa and a tangy homemade yogurt or sour cream.</p>
<p><a href="http://www.pantrydiaries.com/wp-content/uploads/2011/08/029spicy-beans-and-corn.jpg" rel="lightbox[3670]"><img src="http://www.pantrydiaries.com/wp-content/uploads/2011/08/029spicy-beans-and-corn.jpg" alt="" title="029spicy beans and corn" width="477" height="358" class="aligncenter size-full wp-image-3675" /></a></p>
<p>This meal and it&#8217;s many variations has become a summertime staple that everyone can enjoy and customize to their own preference.</p>
<p>Burrito style for those who are always running late and eating on the way or pizza stlye with a little Manchego cheese for weekend movie night.</p>
<p><a href="http://www.pantrydiaries.com/wp-content/uploads/2011/08/002Ari-and-Belle-Quesadillas.jpg" rel="lightbox[3670]"><img src="http://www.pantrydiaries.com/wp-content/uploads/2011/08/002Ari-and-Belle-Quesadillas.jpg" alt="" title="002Ari and Belle Quesadillas" width="477" height="358" class="aligncenter size-full wp-image-3685" /></a></p>
<p>So, don&#8217;t get frustrated get creative!</p>
<p>These budget friendly meals are flexible. Use what you have around and get fancy when the budget allows.</p>
<p>They are built in to be nutritious so you just can&#8217;t go wrong!</p>
<p>With only healthy options even the least culinary inclined among you can&#8217;t help but choose something delicious and nutritious while you enjoy a little fun in the sun!</p>

<p><a href="http://www.rolandfood.com/?gclid=CPbky7eThqkCFUQQNAods21mrA#AJmRNyxwz">Roland Foods</a> offers a wide variety of specialty foods from around the globe and was kind enough to send me this box of Kaniwa to try at home.</p>
<p><a href="http://www.pantrydiaries.com/wp-content/uploads/2011/05/009Kaniwa-salad-veggies.jpg" rel="lightbox[3591]"><img src="http://www.pantrydiaries.com/wp-content/uploads/2011/05/009Kaniwa-salad-veggies.jpg" alt="" title="009Kaniwa salad veggies" width="477" height="358" class="aligncenter size-full wp-image-3599" /></a></p>
<p>I have cooked with <a href="http://www.whfoods.com/genpage.php?dbid=142&#038;tname=foodspice">Quinoa</a> in the past and I love it.</p>
<p>Kaniwa is similar to quinoa but seems to feel hardier and denser.</p>
<p> <a href="http://www.pantrydiaries.com/wp-content/uploads/2011/05/013Kaniwa-salad-tomatoes.jpg" rel="lightbox[3591]"><img src="http://www.pantrydiaries.com/wp-content/uploads/2011/05/013Kaniwa-salad-tomatoes.jpg" alt="" title="013Kaniwa salad tomatoes" width="477" height="358" class="aligncenter size-full wp-image-3598" /></a></p>
<p>I gathered all the vegetables I could find and chopped them to equal size.</p>
<p><a href="http://www.pantrydiaries.com/wp-content/uploads/2011/05/016Kaniwa-salad-veggies.jpg" rel="lightbox[3591]"><img src="http://www.pantrydiaries.com/wp-content/uploads/2011/05/016Kaniwa-salad-veggies.jpg" alt="" title="016Kaniwa salad veggies" width="477" height="358" class="aligncenter size-full wp-image-3597" /></a></p>
<p>1 package of Grape tomatoes cut in half, 7 green onions, 1/2 of a red onion, 1 can of pinto beans, 2 cups of corn, 1 red pepper, 1/2 of a English cucumber, 1 bunch of cilantro, the juice of 3 limes, 1/4 cup of olive oil and salt to taste. </p>
<p>I garnished with avocado.</p>
<p><a href="http://www.pantrydiaries.com/wp-content/uploads/2011/05/020Kaniwa-salad-veggies.jpg" rel="lightbox[3591]"><img src="http://www.pantrydiaries.com/wp-content/uploads/2011/05/020Kaniwa-salad-veggies.jpg" alt="" title="020Kaniwa salad veggies" width="477" height="358" class="aligncenter size-full wp-image-3596" /></a></p>
<p>I put all of the chopped vegetables in a bowl, cooked the 12 oz. box ( about 2 cups ) of Kaniwa and added to the veggies.</p>
<p>I added it hot to the vegetables to bring them to peak flavor.</p>
<p>I find that adding hot grains to the veggies gives off just enough heat to liven the flavors.</p>
<p><a href="http://www.pantrydiaries.com/wp-content/uploads/2011/05/025Kaniwa-salad-hot.jpg" rel="lightbox[3591]"><img src="http://www.pantrydiaries.com/wp-content/uploads/2011/05/025Kaniwa-salad-hot.jpg" alt="" title="025Kaniwa salad hot" width="477" height="358" class="aligncenter size-full wp-image-3595" /></a></p>
<p>I mixed everything then added the olive oil and the lime juice.</p>
<p><a href="http://www.pantrydiaries.com/wp-content/uploads/2011/05/032Kaniwa-salad-mixed.jpg" rel="lightbox[3591]"><img src="http://www.pantrydiaries.com/wp-content/uploads/2011/05/032Kaniwa-salad-mixed.jpg" alt="" title="032Kaniwa salad mixed" width="477" height="358" class="aligncenter size-full wp-image-3594" /></a></p>
<p>Serve and garnish with half an avocado.</p>
<p>Add salt to taste.</p>
<p>This was fantastic.</p>
<p>Everyone loved this vegan, protein rich meal which could also be great as a side dish with grilled salmon.</p>

<p>Super easy and so delicious!</p>
<p>Whole grain spinach spirals and red pepper are perfect paired with a creamy goat cheese sauce.</p>
<p><img src="http://www.pantrydiaries.com/wp-content/uploads/2011/03/002spinach-pasta.jpg" alt="002spinach pasta" title="002spinach pasta" width="477" height="358" class="aligncenter size-full wp-image-3176" /></p>
<p>I roasted the pepper in the oven at 350 for about 20 minutes then chopped them and threw them into the boiling pasta water for abot 10 minutes.</p>
<p>This infused the flavor a bit and softened the peppers.</p>
<p><img src="http://www.pantrydiaries.com/wp-content/uploads/2011/03/005cheese-sauce.jpg" alt="005cheese sauce" title="005cheese sauce" width="477" height="358" class="aligncenter size-full wp-image-3178" /></p>
<p>I started with about 2 tbsp. of butter, 2 cloves crushed garlic, 1/2 cup of half and half, and 1 cup of sour cream.</p>
<p>Let this simmer for a few minutes then add a half a cup or more to taste of soft goat cheese.</p>
<p><img src="http://www.pantrydiaries.com/wp-content/uploads/2011/03/010spinach-pasta-with-goatcheese-sauce.jpg" alt="010spinach pasta with goatcheese sauce" title="010spinach pasta with goatcheese sauce" width="477" height="358" class="aligncenter size-full wp-image-3179" /></p>
<p>Drain the pasta and mix in the goat cheese with the red pepper and stir.</p>
<p>Add salt and pepper to taste.</p>
<p><img src="http://www.pantrydiaries.com/wp-content/uploads/2011/03/015spinach-pasta-with-red-pepper-and-goatcheese-sauce.jpg" alt="015spinach pasta with red pepper and goatcheese sauce" title="015spinach pasta with red pepper and goatcheese sauce" width="477" height="358" class="aligncenter size-full wp-image-3177" /></p>
<p>This is a great meatless meal, nutritious and filling.<br />
Enjoy! </p>

<p>These roasted vegetables have become a must have staple around here.</p>
<p>They are super easy to prepare and simply bake in the oven on 425 degrees fahrenheit for 20 minutes.</p>
<p><img src="http://www.pantrydiaries.com/wp-content/uploads/2011/02/010roasted-veggies.jpg" alt="010roasted veggies" title="010roasted veggies" width="477" height="358" class="aligncenter size-full wp-image-3032" /></p>
<p>Use restraint with the olive oil. </p>
<p>You don&#8217;t want to fry the veggies, just coat them lightly for a little flavor and so they won&#8217;t dry out.</p>
<p>Also, try using a fancy salt for more exotic taste and texture.</p>
<p><img src="http://www.pantrydiaries.com/wp-content/uploads/2011/02/011roasted-veggies.jpg" alt="011roasted veggies" title="011roasted veggies" width="477" height="358" class="aligncenter size-full wp-image-3031" /></p>
<p>Cut them evenly so that they all cook at the same time.</p>
<p><img src="http://www.pantrydiaries.com/wp-content/uploads/2011/02/012roasted-veggies.jpg" alt="012roasted veggies" title="012roasted veggies" width="477" height="358" class="aligncenter size-full wp-image-3030" /></p>
<p>Don&#8217;t overcook; you don&#8217;t want them to be too soft or mushy.</p>
<p><img src="http://www.pantrydiaries.com/wp-content/uploads/2011/02/017roasted-veggies.jpg" alt="017roasted veggies" title="017roasted veggies" width="477" height="358" class="aligncenter size-full wp-image-3029" /></p>
<p>Salt and pepper is all you need for seasoning.</p>
<p>The beauty of this dish is it&#8217;s simplicity!</p>
<p><img src="http://www.pantrydiaries.com/wp-content/uploads/2011/02/018roasted-veggies.jpg" alt="018roasted veggies" title="018roasted veggies" width="477" height="358" class="aligncenter size-full wp-image-3027" /></p>
<p>These veggies go with everything, are healthy and filling!</p>
<p><img src="http://www.pantrydiaries.com/wp-content/uploads/2011/02/019roasted-veggies.jpg" alt="019roasted veggies" title="019roasted veggies" width="477" height="358" class="aligncenter size-full wp-image-3025" /></p>
<p>Make big batches and keep them in the fridge for an always ready snack, side dish or meal.</p>
<p>Add a salad or soup and you have a meal.</p>
<p>You can add some feta cheese or even put them between two slices of toated wheat bread for a sandwich.</p>
<p>There are so many ways to use these.</p>
<p>They can be your new &#8220;fast food&#8221;.</p>
<p>Having stuff like this on hand keeps your snacking healthy and helps cut down on preparation time for meals!</p>
<p><img src="http://www.pantrydiaries.com/wp-content/uploads/2011/02/032roasted-veggies.jpg" alt="032roasted veggies" title="032roasted veggies" width="477" height="358" class="aligncenter size-full wp-image-3024" /></p>

<p>This is not so much a recipe as one woman&#8217;s quest for a fresh and spicy meal on an unusually warm and sunny winter day!</p>
<p><img src="http://www.pantrydiaries.com/wp-content/uploads/2011/02/079green-curry-soba-noodles.jpg" alt="079green curry soba noodles" title="079green curry soba noodles" width="477" height="358" class="aligncenter size-full wp-image-3007" /></p>
<p>A trip to the neighborhood grocer yeilded fresh ginger, avocados, limes a jar of green curry paste, soba noodles&#8230;.<br />
You get the idea.</p>
<p><img src="http://www.pantrydiaries.com/wp-content/uploads/2011/02/033green-curry-noodles.jpg" alt="033green curry noodles" title="033green curry noodles" width="477" height="358" class="aligncenter size-full wp-image-3014" /></p>
<p>This dish is quick and easy to prepare.</p>
<p>I can&#8217;t get everything cleaned, cut, chopped and sauteed before the noodles are finished cooking.</p>
<p>You will want to time it so that you don&#8217;t overcook them.</p>
<p>I sliced some ginger with the red pepper and asparagus and added a little coconut oil to lightly sautee the veggies.</p>
<p><img src="http://www.pantrydiaries.com/wp-content/uploads/2011/02/051green-curry-noodles.jpg" alt="051green curry noodles" title="051green curry noodles" width="477" height="358" class="aligncenter size-full wp-image-3012" /></p>
<p>You can put this together pretty fast.</p>
<p>Squeeze fresh lime juice over everything before serving, it really brightens the flavors!</p>
<p>Toss chopped cilantro into the draining noodles to gather just enough heat to bring out the herb&#8217;s pungent aroma!</p>
<p><img src="http://www.pantrydiaries.com/wp-content/uploads/2011/02/055green-curry-noodles.jpg" alt="055green curry noodles" title="055green curry noodles" width="477" height="358" class="aligncenter size-full wp-image-3011" /></p>
<p>Fresh avocado is creamy and perfect with the spicy green curry and coconut sauce.</p>
<p><img src="http://www.pantrydiaries.com/wp-content/uploads/2011/02/073green-curry-soba-noodles.jpg" alt="073green curry soba noodles" title="073green curry soba noodles" width="477" height="358" class="aligncenter size-full wp-image-3010" /></p>
<p>I also made a batch of whole wheat linguine but the soba were slightly better.</p>
<p>Not in flavor but in texture.</p>
<p><img src="http://www.pantrydiaries.com/wp-content/uploads/2011/02/076green-curry-soba-noodles.jpg" alt="076green curry soba noodles" title="076green curry soba noodles" width="477" height="358" class="aligncenter size-full wp-image-3008" /></p>
<p>Try this for a nice meatless meal that is flavorful and filling.</p>

<p>Don&#8217;t hate me!</p>
<p>We should all eat more cabbage.</p>
<p>It&#8217;s inexpensive and one of the healthiest foods on the planet.</p>
<p>I like to make a big pot of this and have as my go to dish all week long!</p>
<p>I also add stuff to it like cheese and other veggies. I eat it with whole wheat bread or brown rice.</p>
<p>This dish is so simple yet so delicious you may just find yourself addicted&#8230;as I am!</p>
<p>For those of us avoiding simple carbs, these tender cooked cabbage &#8220;noodles&#8221; make a nice substitute for the real thing.</p>
<p>The shape and texture satisfies noodle lust!</p>
<p><img src="http://www.pantrydiaries.com/wp-content/uploads/2010/10/074Cabbage.jpg" alt="074Cabbage" title="074Cabbage" width="477" height="358" class="aligncenter size-full wp-image-2536" /></p>
<p>Simply chop a head of cabbage; I always use 2 and 2-4 tomatoes and sautee in a large deep pan with olive oil.</p>
<p>When the cabbage is tender add the tomatoes.</p>
<p>When everything in soft add the balsamic; enough to add color.</p>
<p>You can also use canned tomato sauce or diced tomatoes. Make sure that they are unseasoned.</p>
<p>Unseasoned tomato paste would work as well.</p>
<p>Cover the pot and allow to cook for 2-4 hours on medium to low heat.</p>
<p>Add salt and pepper to taste.</p>
<p><img src="http://www.pantrydiaries.com/wp-content/uploads/2010/10/083cooked-cabbage-with-tomatoes.jpg" alt="083cooked cabbage with tomatoes" title="083cooked cabbage with tomatoes" width="477" height="358" class="aligncenter size-full wp-image-2539" /></p>
<p><img src="http://www.pantrydiaries.com/wp-content/uploads/2010/10/077cooked-cabbage.jpg" alt="077cooked cabbage" title="077cooked cabbage" width="477" height="358" class="aligncenter size-full wp-image-2538" /></p>
<p><img src="http://www.pantrydiaries.com/wp-content/uploads/2010/10/076cooked-cabbage.jpg" alt="076cooked cabbage" title="076cooked cabbage" width="477" height="358" class="aligncenter size-full wp-image-2537" /></p>
<p>I add flakes of crushed red pepper at the end and garnish with sheep feta and hot sauce!</p>
<p>This is so tasty! So healthy! and soooo addictive you won&#8217;t believe me until you try it!</p>
<p><img src="http://www.pantrydiaries.com/wp-content/uploads/2010/10/030cabbage.jpg" alt="030cabbage" title="030cabbage" width="458" height="358" class="aligncenter size-full wp-image-2540" /></p>

<p>I don&#8217;t know why I&#8217;ve always been so intimidated by risotto.</p>
<p><a href="http://www.cooksillustrated.com/tastetests/overview.asp?docid=13283">Arborio rice</a> seemed exotic and complicated.</p>
<p>Like most people I assumed that it meant hours standing at the stove; stirring, demanding an almost psychic sense to determine when it is ready.</p>
<p>Well it couldn&#8217;t be further from the truth.</p>
<p>This dish is fast and easy and virtually full proof.</p>
<p><img src="http://www.pantrydiaries.com/wp-content/uploads/2010/09/001risotto.jpg" alt="001risotto" title="001risotto" width="477" height="358" class="aligncenter size-full wp-image-2384" /></p>
<p>I&#8217;d say that about 45 minutes is all that you need to have this dish prepared.</p>
<p><img src="http://www.pantrydiaries.com/wp-content/uploads/2010/09/004rwith-shrimp-am.jpg" alt="004rwith shrimp am" title="004rwith shrimp am" width="477" height="358" class="aligncenter size-full wp-image-2383" /></p>
<p><strong><em>Ingredients</em></strong>:</p>
<p>2 cups risotto Arborio rice</p>
<p>8-10 cups water or vegetable stock</p>
<p><strong><em>Method:</em></strong></p>
<p>In a deep skillet toast the risotto in about 1/4 cup of olive oil.</p>
<p>Add 4 cups of liquid and allow to simmer slowly until most of the liquid is absorbed.</p>
<p>Then cup by cup add the remaining liquid as it is absobed by the rice while stirring.</p>
<p>Stirring brings out the starch and creates the creamy texture for which this rice is known.</p>
<p><img src="http://www.pantrydiaries.com/wp-content/uploads/2010/09/005risotto-with-shhrimp-and-asparagus.jpg" alt="005risotto with shhrimp and asparagus" title="005risotto with shhrimp and asparagus" width="477" height="358" class="aligncenter size-full wp-image-2382" /></p>
<p><img src="http://www.pantrydiaries.com/wp-content/uploads/2010/09/007risotto-with-shrimp-and-asparagus.jpg" alt="007risotto with shrimp and asparagus" title="007risotto with shrimp and asparagus" width="477" height="358" class="aligncenter size-full wp-image-2381" /></p>
<p>In a seperate skillet sautee shrimp asparagus and scallops in butter and crushed garlic.</p>
<p>Add to the risotto and mix well.</p>
<p>You can add about 1/4 ohf heavy cream and parmesan cheese if desired.</p>
<p><img src="http://www.pantrydiaries.com/wp-content/uploads/2010/09/011risotto-with-shrimp-and-asparagus.jpg" alt="011risotto with shrimp and asparagus" title="011risotto with shrimp and asparagus" width="477" height="358" class="aligncenter size-full wp-image-2372" /></p>
<p><img src="http://www.pantrydiaries.com/wp-content/uploads/2010/09/014peppers1.jpg" alt="014peppers" title="014peppers" width="477" height="358" class="aligncenter size-full wp-image-2378" /></p>
<p>Sliced peppers go well with eggplant dip which is light and garlicky!</p>
<p><img src="http://www.pantrydiaries.com/wp-content/uploads/2010/09/019eggplant-dip2.jpg" alt="019eggplant dip" title="019eggplant dip" width="477" height="358" class="aligncenter size-full wp-image-2379" /></p>
<p>I couln&#8217;t help but to end this meal with a little <a href="http://www.pantrydiaries.com/2009/11/21/dulce-de-leche-cheesecake/">Dulce de Leche Cheesecake</a>!</p>

<p>What do you do when unexpected guests, a limited budget and a lack time conspire to put a wrench into an otherwise beautiful summer evening?</p>
<p><img src="http://www.pantrydiaries.com/wp-content/uploads/2010/09/039dinner-al-fresco.jpg" alt="039dinner al fresco" title="039dinner al fresco" width="477" height="358" class="aligncenter size-full wp-image-2334" /></p>
<p>I had the quinoa, an avocado, some olives and cheese and the chocolate sauce!</p>
<p>The grocery was about to close in 10 minutes!</p>
<p>I ran in without a plan. Went straight to the &#8220;fish area&#8221;; I needed something fancy that would cook fast and go well with the quinoa salad I had just decided to make.</p>
<p>I bought the salmon; Wild Norwegian Salmon which is thick and moist which for me means easy cooking and a juicy dinner.</p>
<p><img src="http://www.pantrydiaries.com/wp-content/uploads/2010/09/034dinner-al-fresco.jpg" alt="034dinner al fresco" title="034dinner al fresco" width="477" height="358" class="aligncenter size-full wp-image-2333" /></p>
<p>I chopped the avocado and put together a deconstructed salad on a cute plate with some olives and feta cheese.</p>
<p><img src="http://www.pantrydiaries.com/wp-content/uploads/2010/09/054salmon-and-quinoa.jpg" alt="054salmon and quinoa" title="054salmon and quinoa" width="477" height="358" class="aligncenter size-full wp-image-2339" /></p>
<p>A handful of fresh veggies get chopped and go into the cooked quinoa with olive oil and lime juice.</p>
<p><img src="http://www.pantrydiaries.com/wp-content/uploads/2010/09/047salmon-al-fresco.jpg" alt="047salmon al fresco" title="047salmon al fresco" width="477" height="358" class="aligncenter size-full wp-image-2338" /></p>
<p>I broiled the salmon with crushed garlic and some olive oil and lemon.</p>
<p>A quick toss of the quinoa and veggies and plate it up! 20 minutes! Quick and Fancy!</p>
<p><img src="http://www.pantrydiaries.com/wp-content/uploads/2010/09/045salmon-al-fresco.jpg" alt="045salmon al fresco" title="045salmon al fresco" width="477" height="358" class="aligncenter size-full wp-image-2336" /></p>
<p>I bought a quart of coconut ice cream and blackberries and topped it off with chocolate syrup.</p>
<p><img src="http://www.pantrydiaries.com/wp-content/uploads/2010/09/coconut-ice-cream-with-chocoltae-sauce-and-blackberries.jpg" alt="coconut ice cream with chocoltae sauce and blackberries" title="coconut ice cream with chocoltae sauce and blackberries" width="477" height="358" class="aligncenter size-full wp-image-2341" /></p>
<p>I was almost embarrassed by how impressed everyone was but happily took the credit!</p>
