<p>It was  just me for Meatless Monday! today.</p>
<p>I was hungry for pasta, which I rarely eat, and I wanted to keep it simple and fast.</p>
<p>I also didn&#8217;t want to shop for any ingredients. So, Meatless Monday! was a really low carbon footprint meal.</p>
<p>Let me also add that the peanut butter which I use is a no sugar added, natural brand made from roasted Valencia peanuts; that&#8217;s it!</p>
<p>I scavanged the pantry and the freezer for what was available.</p>
<p>I just happen to have a basil plant on my patio. </p>

<p>I am sure that there is a better peanut sauce recipe but I improvised with what I had.</p>

<p><strong><em>Ingredients:</em></strong></p>
<p>Whole wheat pasta</p>
<p>1 cup frozen peas</p>
<p>5 scallions</p>
<p>1/2 cup broccoli florets</p>
<p><strong><em>Sauce:</em></strong></p>
<p>1 Tbspn peanut butter</p>
<p>1 Tbsp Bragg&#8217;s Aminos</p>
<p>1/2 lime, juiced</p>
<p>1 Tbspn crushed red pepper flakes</p>
<p>1/4 cup fresh basil chopped</p>

<p><strong><em>Method:</em></strong></p>
<p>Boil the pasta.</p>
<p>Chop the veggies.</p>
<p>Mix together the peanut butter, Bragg&#8217;s Aminos, lime juice and crushed red pepper.</p>
<p>Place veggies in the colander and pour linguini and water over veggies and allow to drain.</p>
<p>Mix the sauce and chopped basil into the pasta, mix and enjoy!</p>

<p>I like the idea of gently &#8220;scalding&#8221; veggies with the pasta water. It brings out the flavors of the veggies and warms everything nicely.</p>

<p>A cool cucumber salad with red onion complimented this meal and tamed the heat a bit.<br />

<p>This amazing potato salad recipe has endured a handful of incarnations.</p>
<p>Originally, it included bacon so I, a vegetarian, have been on a quest to replace that bacon flavor with a handful of substitutions.</p>
<p>I have tried avocado in the dressing, toasted pine nuts, immitation bacon; spices. You name it.</p>
<p>Nothing really captured not only the flavor of the bacon but the crispy texture or greasy mouthfeel, either.</p>
<p>Fried leeks were my next attempt to capture all of these elements that have always seemed to be missing from the veggie version of this very popular dish.</p>

<p><strong>Recipe:</strong></p>
<p>Chop and boil 4 lbs. of  red skin potatoes</p>
<p>Chop 1 red bell pepper, 1 orange bell pepper, 1 yellow bell pepper</p>
<p>Chop 7-8 green onions</p>
<p>Chop 1 red onion</p>
<p>Fry 2 leeks until crispy</p>
<p>Add ingredients together when cooled</p>
<p>Mix togehter about 2 cups of Hellman&#8217;s Real Mayonnaise with about 2 Tbsn of yellow mustard</p>
<p>Salt and pepper to taste</p>

<p>Learning about leeks was the next step. </p>
<p>My very knowledgable girlfriend gave me some useful tips when dealing with leeks:</p>
<p>Clean them very well as they have dirt in between the leaves and use only the white to bright green portion when frying or using for salads.</p>
<p>The dark green leaves can be used for soups and stews.</p>

<p>This corn on the cob cooks on the grill. What could be easier!?</p>
<p>Open the husks and remove the silk</p>
<p>Mix together butter and crushed garlic and rub all over the corn</p>
<p>Close the husk and place on the grill. Delicious! and Easy!</p>

<p>I used 1 medium eggplant and sliced into thick planks.</p>
<p>Then dredged them in flour, egg wash and Italian style bread crumbs and fried until golden.</p>
<p>Then I place them on a baking sheet and kept them at about 325 degrees until we were ready to make our burgers.</p>
<p>I toasted the buns with a bit of olive oil and made a mayo/spicy barbeque sauce to serve on the side.  </p>

<p>I dug out the stem and brushed the tops with olive oil and broiled for about 10 minutes. </p>
<p><a href="http://www.gourmetsleuth.com/Articles/Produce-638/portobello.aspx">Cooking makes them meatier and tastier</a> so don&#8217;t hesitate to brown them well for maximum flavor! </p>

<p>I blanched spinach for about 5 minutes and added feta cheese and mixed well, then stuffed the mushrooms, drizzeled olive oil on top and broiled them until them until things started to bubble and smell good.</p>

<p>Yogurt sauce would have aslo made a nice condiment compliment but we were ravenous!</p>
<p>We couldn&#8217;t wait to dig in!</p>

<p><a href="http://www.whfoods.com/genpage.php?dbid=142&#038;tname=foodspice">Quinoa</a> is a complete protein and black beans, tomato and basil create a filling nutritious but light meal.</p>
<p>Olive oil and lemon dress the salad with salt to taste.</p>
<p>Quinoa is fast and easy to prepare; 1 cup of quinoa to 2 cups of water, boil for about 15 minutes and you&#8217;re ready to go.</p>
<p>Just chop the rest of the ingredients and fold into warm quinoa. I used canned black beans so I rinsed them well to decrease the sodium content. I used about 1/2 can.</p>

<p>I made a quick &#8220;broth&#8221; for the soup by boiling the stems of the broccolini in water with garlic slices.</p>
<p>I boiled until tender then pureed in the food processor.</p>

<p>I then sauteed 1/2 onion and more garlic in olive oil and created a roux with 2 Tbspn of flour and 2 tbspn of butter.</p>

<p>Then 1 cup of half and half and 2 cups milk. </p>
<p>My girls wanted cheddar so I added about 3/4 of a cup.</p>

<p>I then combined everything in one pot to cook then added the tops of the broccolini to cook in the soup.</p>

<p>Egg and water then bread crumbs go into frying pan with hot oil for a quick, light frying.</p>
<p>Mash up roasted garlic with a fork and mix in about 1/4 cup olive oil to create a &#8220;sauce&#8221;.</p>
<p>Add salt to taste.<br />

<p>You can look at it as a kind of cleanse from a weekend of dining out and a fresh start to the week.</p>

<p>This rice pilaf got rave reviews from my girls.</p>

<p><strong>Ingredients</strong></p>
<p>1 cup brown basmati rice<br />
2 cups water<br />
1 large carrot<br />
1/2 white onion<br />
3 scallions<br />
4-5 cloves garlic<br />
1/4 cup cilantro<br />
1 can garbanzo beans<br />
1 cup corn<br />
1 cup peas<br />
1/2 cup pine nuts<br />
2 Tbsp olive oil<br />
salt and pepper to taste</p>

<p><strong>Method</strong></p>
<p>In a large saute pan add olive oil, garlic, onion, carrots, rice and pine nuts.</p>
<p>Allow to simmer for a few minutes.</p>
<p>Then add corn, peas and scallions.</p>
<p>Allow to simmer a few more minutes then add water and cilantro and allow too cook until the rice is tender.</p>
<p>Salt and pepper to taste.</p>
<p>Garnish with more cilantro</p>

Spring is fragrant and lovely in this little lakeside town.
Warm sunny days inspire herbs and fresh veggies and lots of salad!
My daughters loved this meal and the simple balsamic vinaigrette dressing on the salad.

<p>This chowder was so easy.  </p>
<p><em>Ingredients:</em></p>
<p>2 Cups organic sweet corn<br />
1 ½ cups half and half<br />
½ cup milk<br />
¼ cup chopped cilantro<br />
1 cup finely grated Mexican cheese blend<br />
3 cloves garlic<br />
3 Tbspn organic sweet cream butter<br />
¼ cup chopped roasted red pepper<br />
¼ white onion chopped<br />
½ Tbspn chili powder<br />
Salt and pepper to taste</p>

<p><em>Method:</em></p>
<p>Add butter to medium sized sauté pot.<br />
Add chopped garlic, chili powder, onion and corn and allow to sauté for a few minutes.<br />
Add cilantro half and half and cheese.<br />
Allow to cook then add milk; enough to create a smooth creamy consistency.<br />
Serve warm  and enjoy!</p>

<p>Meatless Monday! was a huge hit tonight.  It may have been the best to date.</p>
<p>The soup and sandwich idea was inspired by a cold and rainy day</p>
<p>This meal was not just meatless but vegan deliciousness.</p>
<p>My kale obsession continues and I have made it kid friendly and so satisfying.</p>
<p>I had planned to put the white beans in the soup and serve with a gourmet toasted cheese sandwich. When I mentioned this to my daughter she turned up her nose at the cheese sandwich idea, which actually made me happy as I am all about vegan meals.</p>
<p>So I began “deconstructing”. What to do with the beans?  What do we get from cheese that we like so much? The creamy, filling, salty goodness! I can do that with white beans!</p>

<p>A baguette thinly sliced and lightly coated with fragrant organic olive oil was the beginning.</p>
<p>I then lightly toasted them and put them aside.<br />
I sautéed ¼ of a white onion with 5 cloves of garlic and about 2 big tablespoons of rosemary in ¼ cup of olive oil until the onions were transparent.<br />
Then I placed the cooled mixture into the food processer with 2 cans of white northern beans and pureed and set this aside, also.<br />
I then sliced 1 large roasted red pepper.</p>
<p>I also had a large bunch of fresh basil. I used 5-6 cloves of garlic and toasted about a half cup of pine nuts and combined in the food processer with ¾ cup of olive oil and set that aside to assemble right before dinner so that the crostini did not become soggy. </p>

<p>The kale soup was easy plus I cheated with vegan soup bullion.</p>
<p>In a large soup pot I sautéed ½ a white onion with 5-6 cloves of garlic and about ½ cup of olive oil.</p>
<p>I chopped the kale and sautéed it for a bit, then added cubed yellow organic potatoes.</p>
<p>I then added about 8-10 cups of water and 2 tablespoons of vegan bullion and allowed it to cook for about an hour and a half.</p>

<p>Parmesan cheese tops my daughters soup.<br />

<p>This wine was great with the soup.<br />

<p>My food processor was my best friend today. I couldn&#8217;t have done it without her! I could have but it wouldn&#8217;t have been as easy or as fun!<br />
