Valentine’s Day Sugar Cookies with Icing

My little one did a great job with these cookies.

I put all the ingredients for the dough in the food processor and that was it.

I gave her the dough and she rolled and cut out the hearts.

The icing is especially nice to work with and cures to a nice shiny hard finish.

Everyone loved the flavors of the cookies and the icing.

I consider these a “hit” and will add them to my Sure Thing bag of tricks for holidays and special occasions.

Sugar Cookies:

1 1/2 cups all purpose flour
1/4 teaspoon salt
1/2 teaspoon baking soda
1/2 cup unsalted butter, room temperature
1/2 cup granulated white sugar
1 large egg, lightly beaten
1 teaspoon pure vanilla extract

Bake at 350 degrees for 8-10 minutes
Allow to cool then frost

Ingredients

1 cup confectioners’ sugar
2 teaspoons milk
2 teaspoons light corn syrup
1/4 teaspoon almond extract
assorted food coloring

Directions

In a small bowl, stir together confectioners’ sugar and milk until smooth. Beat in corn syrup and almond extract until icing is smooth and glossy. If icing is too thick, add more corn syrup.
Divide into separate bowls, and add food colorings to each to desired intensity. Dip cookies, or paint them with a brush.
